3 cups all-purpose flour

1 tablespoon baking powder

1 tablespoon baking soda

1 tablespoon cinnamon
1 teaspoon kosher salt

1 ½ cups butter

1 ½ cups granulated sugar
1 1½ cups brown sugar

3 eggs

1 tablespoon vanilla

3 cups old-fashioned rolled oats

2 cups sweetened flake coconut
3 cups chocolate chips

NOTE: I use white chocolate chips.

Preheat oven to 350 F degrees.

Mix flour, baking powder, baking soda, cinnamon and salt in large bowl. Set aside.

In a stand mixer, beat the butter until creamy. Add both sugars and beat until combined.

Scrape down sides and add the eggs and vanilla. Beat until combined.

Slowly add in the flour mixture. Mix on low just until combined. Add the oats and

coconut and beat again until combined. Your mixer will be almost full to the max at this

point.

Add in the chocolate chips and pecans. If your mixer can handle it go ahead and mix.

Otherwise, detach the bowl and mix with your hands or a wooden spoon, but be sure

ALL the ingredients are very well incorporated.

Scoop about 1 tablespoon of dough at a time onto a parchment covered cookie sheet and

bake until edges are lightly browned, 10-12 minutes.

NOTE: I like my cookies small, but feel free to double or even triple the size of each

cookie and bake longer according to the size.
