2 lbs of ground pork or lamb
½ cup diced tomatoes
½ cup diced red onions
1 cup of spinach (can be fresh or frozen)
2-3 cloves of freshly diced garlic (if using roasted garlic, dice up 4-6 cloves)
½ cup of freshly diced cilantro
½ cup of feta cheese
½ cup of diced kalamata olives (optional)
½ cup of arugula (optional)
2 eggs
½ cup of Panko (Japanese breadcrumbs)
1 can of tomato sauce (likely won’t use it all, so plan to have pasta later in the week!)

Directions:

Preheat oven to 375 F degrees.

In a large bowl, combine pork or lamb with all ingredients except for the can of tomato

sauce. Add more breadcrumbs if the mixture appears too wet.

Line the bottom of the loaf pan with tomato sauce before filling with mixture. Spoon

tomato sauce on top under covered. Seal with tinfoil and bake for 45 minutes.

NOTE: when I make this recipe, I freeze it into single-serving portions.

Instead of using a loaf pan, separate the mixture into a clean muffin tin and freeze for a

couple hours. Remove, pop out frozen meatloaves and put into a large freezer bag. Now

you’re ready for a good meal at a moment’s notice!

To cook these morsels, line the bottom of a glass pan (2x4 or 4x6 depending on how

many you are making) with tomato sauce. Cover with foil and bake at 375 F degrees for

30-45 minutes. Serve with side dishes.
