1-15oz. Can Black Beans 

1 cup of black rice or brown rice

1 tomato (diced)

¼ cup cilantro (diced)

1 green onion (diced)

1 med jalapeño pepper (diced)

Romaine lettuce shredded

2 tbsp. fresh lime juice

A pack of Whole Wheat Soft Tortilla Shells

1 tsp. Sea Salt

2 tbsp. Cumin

1 tbsp. Onion Powder

1 tbsp. Garlic Powder

A dash of Cayenne

Directions:

Cook black beans and rice as directed. Add cumin, onion powder, garlic powder, cayenne pepper and sea salt, to black beans. Add fresh lime juice to cooked rice.

This recipe was submitted by Djenaba "Baba" Williams. Just to share I went veggie on February 28, 2013. I've been battling diabetes for over 7 years. In a years time I cut out meat and diary. I lost 35 lbs and no longer have to be on meds. I'm sharing because maybe I can help another family member. I still enjoy foods just in a healthier way.
