1 lime juiced
2 T vegetable oil
1T sesame oil
2 T stir fry sauce
2 tsp grated fresh ginger
1 clove garlic, minced
1 pound fresh shrimp, deveined and chopped
1/2 red pepper seeded and diced
2-3 green onions(scallions) diced
1 5oz can water chestnuts drained and chopped
1 head iceberg lettuce

Directions:
Directions:
In bowl combine lime juice, ginger, 1 T oil,1 T sesame oil, 1 T stir fry sauce and garlic. Add shrimp mix. Marinate in refrigerator at least 30 min.
In medium skillet heat remaining oil add pepper, green onion and water chestnuts, saute 3 minutes.
Add shrimp and marinate and cook 3 more minutes til shrimp done. Stir in remaining soy or stir fry sauce.
Separate lettuce leaves put 1/6 of shrimp mixture on each and roll up like spring roll
