Broiled Salmon with Mango Salsa & Coconut rice Recipe

Ingredients: 1-Large Salmon filet 1-Mango 1-Avocado 1-Lemon 1-Purple Onion 1-Jalapeno (optional) Sesame seeds 2- c. jasmine rice 1-can coconut milk 1-can coconut cream dried dill weed salt pepper

Directions: Mango Salsa- Cube mango and avocado add to bowl. Add finely chopped purple onion and jalapeno to your liking. Mix and chill.
Coconut Rice- Add coconut milk and coconut cream to saucepan. Simmer on low until well blended. One this begins to thicken pour out a 1/4 of mixture and set aside. Add 2 c. of jasmine rice to milk and cream mixture. Add 1 tlbs of butter and continue to stir. Add water 1/2 inch above rice line. Stir and bring to boil. Reduce heat to low and cover for 20 minutes. When rice is cooked gradually add remaining milk and cream set aside allowing rice to slowly absorb.
Broiled Salmon: Set oven broiler to high Drizzle a small amount of olive oil in shallow baking sheet. Cut salmon and arrange on pan. Squeeze lemon on all pieces of fish. Season with salt, pepper and dill weed. Sprinkle sesame seeds generously on fish. Cook fish in broiler for 7-10 minutes. You have to rotate pan once. Do not overcook. Fish will continue to cook while resting once removed from oven.
Serve fish with salsa pilled high and a side of coconut rice! Bon appetite
