Ingredients:  
6 oz Chinese Roast Pork (cooked) or substitute your favorite protein.
4 C Cooked cold rice
4 Eggs (1 egg per cup of rice)
2 Stalks scallion, chopped (separate white & green)
1 C Bean sprouts
4-6 Tbsp Peanut or Canola oil

Season Sauce:

4 Tbsp Soy sauce (2 light/2dark if available)
1 Tbsp Oyster Sauce

Cook rice 2 hours before (or any leftover rice works great)
Dice roast pork. Chop scallions and separate. Beat eggs and make Seasoning sauce.
Heat 2 Tbsp oil and scramble eggs. Remove and set aside. Add 2 Tbsp oil and sauté roast pork for 1 minute. Remove and set aside. Add 2 Tbsp oil and sauté white scallions until fragrant. Add rice, pork and eggs. mix well. Add bean sprouts and scallion greens. Add Season Sauce and toss to coat.

Note: Chinese Sausage can also be substituted for Roast Pork. Stir fry sausage until fat becomes transparent.

Aunt Nancy took Chinese cooking classes many years ago and shared this classic with me. This was also part of my "Special Occassion" menu for my parents and Bill. It is a lot of preparation but it is definitely worth it. Originally, I used a wok but any deep sauté pan will do.
