1 lb Lo mein noodles
8 oz Roast pork (cooked) or substitute with your favorite protein.
4 Dried Chinese mushrooms
1 C Bamboo shoots
1 1/2 lb Bok Choy
2 Stalks Scallion
Sesame Oil
2 Tbsp plus 4 Tbsp Peanut or Canola Oil

Season Sauce #1

4 Tbsp Soy sauce (2 dark/2 light if available)
3 Tbsp Oyster Sauce

Season Sauce #2 (Vegetables)

1/2 tsp Salt
1/4 tsp Sugar
1 Tbsp Rice Wine

Directions:
Soak Chinese mushrooms in cold water. Cook noodles in boiling water for 3 minutes. Drain and toss with sesame oil. Shred cabbage, slice roast pork and bamboo shoots. Cut scallion into 1" pieces, separating white and green. Make Season Sauce #1 & #2.

Heat 2 Tbsp oil and stir fry pork for 1 minute, remove and set aside. Heat 4 Tbsp oil, sauté white scallions and mushroom for 1 minute. Then add rest of vegetables and scallion greens until soft. Add Season Sauce #2 and mix well. Return pork and noodles and add Season Sauce #1. Toss to coat.

Aunt Nancy took Chinese cooking lessons many years ago and what a treat! I have made this for my parents and Bill (when we were dating) as a "Special Occasion" dinner. Most ingredients can be found at Asian or Specialty grocery stores.
