12-18 Corn Tortillas
1 1/2 cups shredded beef
1 cup shredded cheese
1 can red enchilada sauce
1 can condensed tomato soup
3 T. water
3 T. diced white onion
3 T. oil (vegetable or canola)
1 T. sugar

Directions:
Directions:
Preheat oven to 375 degrees.
Mix tomato soup and red enchilada sauce in a bowl. Add 3 T. water to thin, and 1 T. sugar, stirring well. Set aside. Coat a 9x13 pan with non-stick spray.
Put oil in a small skillet and heat over med-high heat. Add the tortillas to the oil to gently and barely cook them. (You don't want to really cook them; this just softens the tortilla so it doesn't tear or crumble when you roll it up.) Set them aside on a plate lined with paper towels. Lay out the shredded beef, add the diced onions. Take a tortilla and dip both sides in the sauce. Lay on and add the beef/onion mixture down the middle of the tortilla, and sprinkle some cheese on and roll it up. Place gently in the pan and repeat until all of the tortillas are used and the pan is full.
Put the pan in the oven and bake for 30 mins. Serve with a dollop of sour cream, and garnish with lime wedges, sliced olives, and chopped cilantro.
This can also be made with shredded chicken or pork, or just plain cheese enchiladas!
