2 bags of frozen chopped spinach
4 tbsp. chopped onion
4 tbs. flour
12 oz. Mexi Velveeta
1 can evaporated milk
Bread crumbs
Crystal hot sauce (to taste)
Salt and pepper (to taste)

Directions:
Preheat oven to 350. Cook spinach as directed on package. Drain. Save some of the spinach water.
In pan, melt butter and add flour slowly stirring until well bended and smooth.
Add onion and cook until soft.
Add spinach water and cream stirring continuously to avoid lumps.
Stir in cubed cheese and seasoning until melted.
Pour mixture into baking pan. Top with buttered bread crumbs and bake until golden.
