1 c. flour
3/4 c. quick cooking oats
1-1/2 c. sugar, divided
1 tsp. cinnamon
1/2 c. butter, cold
3 c. rhubarb, diced
2 c. elderberries
2 Tbsp. cornstarch
1 c. water
1 tsp. vanilla

Directions:
Directions:
In a bowl, combine the flour, oats, 1/2 c. sugar & cinnamon, cut in butter until mixture resembles coarse crumbs. Set aside half for topping. Press remaining crumbs into an ungreased 11"x7" baking dish. Top with rhubarb & berries. In a small pan, combine cornstarch & remaining sugar. Gradually stir in water, bring to a boil. Reduce heat, cook & stir for 1-2 min. or until thickened. Remove from heat, stir in vanilla. Pour over the fruit. Sprinkle with the reserved crumb mixture. Bake at 350º for 50-55 min. or until golden brown. Serve warm or cold.
