1-1/2 cups of fresh raw finely ground carrots
4 ounces roasted finely ground walnuts
1 cup vegetable oil
1 cup flour
1-1/2 cups sugar
3 eggs
1 tbsp ground cinnamon
1 tsp baking powder

Frosting:
1 cup whip cream (35%)
3/4 cup sugar
2 tsp vanilla sugar
8 ounce cream cheese (room temperature)

Preheat oven to 350º
Clean carrots, ground fine and put in bowl. In a separate mixing bowl put 3 eggs and beat on high speed until fluffy solid foam. Without stopping whisking, pour oil, keep whisking, add sugar, whisk well. Add carrots and 2 tbsp walnuts. In a separate bowl mix flour, baking powder, cinnamon. Whisk and pour into carrot mixture. Add 1 tsp salt and gently mix.
Baking sheet, 12x16", lined with greased baking paper. Bake for approximately 20-25 minutes. Remove from oven and cool for 10 minutes. Remove from baking sheet and baking paper and allow to cool completely before frosting.

To prepare frosting:
In mix bowl pour 1 cup of cold whip cream, add 3/4 cup sugar and 2 tsp vanilla sugar and beat until fluffy (do not over beat!). Beat cream cheese in a separate bowl and then add in to whip cream and combine.
Cooled cake divide into three equal parts, spread frosting on each layer. Stack the cakes on a serving plate. The rest of roasted chopped walnuts decorate the cake. Enjoy!
