2 boxes frozen chopped spinach or bag of fresh spinach
minced onion, sautéed in butter
pinch of nutmeg
pinch of salt
15 oz. ricotta
1/2 cup grated Parmesan cheese
1 cup heavy cream
3 eggs
pie crust

Directions:
Directions:
Preheat oven to 350º. Defrost frozen spinach and drain well. If using fresh spinach, use food processor to chop into small pieces.

Add the rest of the ingredients to the spinach. Pour into pie shell and bake for 45 minutes.
