Thumbprint Cookies Recipe

1/2 c. shortening
1/4 c. brown sugar (packed)
1 egg (separated)
1/2 t. vanilla
1 c. flour
1/4 t. salt
3/4 c. chopped pecans (should be roasted)

Directions:
Directions:
Cream shortening & sugars. Add egg yolk & vanilla. Add dry ingredients. Roll dough into 1" balls. Dip into slightly beaten egg white. Roll in nuts. Place on cookie sheet. Pre thumb into center. Bake at 375º for 10 -12 minutes. Fill thumbprint with jelly or powdered sugar icing.

You may need to repress thumbprints after coming out of the oven. Remember to roast the pecans in the oven before chopping.
