3 Tbsp. skim milk
1/3 c. sugar
1 Tbsp. cocoa powder
1 1/2 tsp. vanilla or almond extract
1/3 c. crunchy peanut butter
1/8 c. wheat germ (optional)
1 1/2 tsp. ground flax (optional)
1 c. quick oatmeal

Heat milk, sugar and cocoa powder over high heat until boiling. Take off heat and stir in vanilla and peanut butter. Stir until combined. Add in wheat germ, flax and oatmeal. Drop on wax paper or eat immediately.

This is probably my most requested recipe. I’ve been making No Bake Cookies, which was a recipe from a Mulligan Stew magazine, since I was 8. As I got older, I started to play around with this recipe and produced a healthier version that is just as tasty. This recipe is very flexible! When I make them I NEVER measure out anything and I often add more or less of ingredients and they still taste great. I sometimes leave out the wheat germ and flax seeds and just add more oatmeal. I have made these replacing the sugar with about 3 tablespoons of honey and they still tasted great.
