2 tbsp. olive oil
2 medium onions, chopped (1 cup)
2 cloves garlic, minced
4 C. chicken broth
1 1/2 lb. Yukon Gold potatoes, chopped (4 cups)
2 C. spinach, chopped
1 tsp. fresh oregano, chopped
1 lemon, zest and juiced
2 oz. feta cheese, crumbled

Directions:
Directions:
In a Dutch oven heat 1 tbsp. olive oil, add onions and garlic, cook for 3-4 minutes or until tender. Stir in broth and potatoes. Bring to boil; reduce heat. Cover and cook 10-15 minutes or until potatoes are tender. Stir in spinach and oregano. Cover and cook 2-3 minutes or until spinach has wilted. Remove from the heat. Stir in lemon zest and juice and remaining oil. Let stand 10 minutes. Season to taste with s/p. Top with cheese and additional zest, if desired.
