12 count corn tortillas
3 c med cheddar cheese (shredded)
1 lg onion (diced)
1/2 c black olives (sliced)
Large can of enchilada sauce
1 c veg. oil

Directions:
Directions:
Heat oven 350º
Line cookie sheet with aluminum foil.
Warm enchilada sauce in a pan big enough for tortillas
Heat oil in fry pan on med. Lay tortilla in oil and fry 5 sec on each side.
Dip tortilla in enchilada sauce. Lay on cookie sheet. Put cheese,onion and olives on tortilla. Put another enchilada dipped tortilla on top and more cheese, onion, olives. 3 layer. Make 4 stacks. Pour sauce over stacks.

Bake 10 minutes so that cheese melts.

Serve with warmed refried beans and shredded lettuce.
