Filling (make first)
1/2 lb dates (chop)
1/4 c sugar
1 T water

Cookie:
2 c oatmeal
2 c flour
1 c sugar
1/3 c buttermilk
1 c shortening (melted)
1 t baking soda
1/4 t salt

Filling:
Stir in small pan over medium heat till boiling. Stir constantly till thick.

Cookies:
Flour cutting board before mixing. Mix ingredients with hands. Roll out to 1/4" thick then cut into rounds. Place on cookie sheet. Put 1 t filling on each
and seal with another cookie over top. It will break and resemble a volcano.
Sprinkle with sugar and Bake 350 º for 10 minutes

This was my Grandma's recipe. They are kind of a pain to make but are reallllly good and the kids love the volcano shape.
