2 c. Zucchini, chopped
1 c. Tomatoes, chopped
1/2 c. Onion, chopped
1/3 c. Grated Parmesan
1 1/2 c Milk
3/4 c Bisquick baking mix
3 Eggs
1/2 tsp. Salt
1/4 tsp. Black pepper

Directions:
Directions:
Heat oven to 400º. Grease a 10 in. quiche dish or pie plate. Sprinkle zucchini, tomatoes,, onion and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 min. with hand beater. Pour into plate. Bake until knife inserted in center comes out clean, about 30 min. Cool 5 minutes and slice.
