1/2 tsp ground cumin
1/4 tsp each salt and pepper
4 pork chops, bone-in or boneless
3 cloves garlic
1/2 tsp each ground coriander, curry powder, ground ginger
1 bag spinach (about 7 cups)
1/2 cup plain yogurt
1/2 tsp sugar
1/4 tsp garam masala (optional)

1. Combine cumin, salt and pepper and sprinkle over both sides of pork chops.
2. In large non-stick skillet, heat oil and butter over high heat. Cook chops turning once until well browned. About 2 min each side. Set aside.
3. Reduce heat to medium. Add garlic, coriander, curry and ginger to pan along with additional tsp of oil if needed. Cook, stirring for 30 seconds.
4. Add spinach. Increase heat to high and cook, stirring, until spinach is tender and excess liquid has evaporated. Return chops to pan, pushing spinach aside. Add 1/4 cup water, cover and simmer over medium low heat for 2 to 8 min. until chops are cooked through. Transfer chops to a plate. Turn off heat. Blend yogurt and sugar into spinach until smooth.
5. Taste and adjust seasonings with salt. Serve chops on spinach mixture. Sprinkle with garam masala. Makes four servings.
