1 1/2 c. dry green lentils (washed and drained)
8 c. water
1 1/5 tsp. salt
1/4 tsp. pepper
1 c. long grain white rice
1/2 c. vegetable oil
1 large onion chopped
1 lemon cut into wedges
Pita bread

Directions:
Directions:
Wash lentils, drain and place in a large saucepan. Add water. Cover and cook for 1 hour or until lentils are tender.

Add salt, pepper and rice to the lentils. Cook at low boil for 25 minutes stirring occasionally,

Saute onions in oil until they are a golden brown. Add to lentil mixture and remove from heat.

Serve hot with a squeeze of fresh lemon using the pita bread to scoop up the lentils.
