For crepes

4 beaten eggs
3 cups milk
1 tsp. salt
2 cups flour

Turkey Left Overs
1 can of Mushroom soup or gravy

Mix well in order given. Pour 1/2 cup batter on lightly greased hot non stick pan, tipping it around to make a very thin layer. When crepe is light tan on bottom, flip over and cook till light tan on other side. Small amount of oil may be added at intervals. Cook till all batter is used up, stacking crepes on top of each other on large plate and let cool. (should make about 12 crepes)
Turkey Left Overs- Finely cube or shred cooked turkey. add whatever else you like that is left over from turkey dinner, mashed potatoes, stuffing, cooked diced veggies, cranberries, some gravy for moistening. Mix well and form into1inch X 2inch little loafs in your hand. Spread out a crepe(should be about 9 inch dia.) and place turkey loaf in center, fold edges and roll up. Place in greased 8 inch x 12 inch baking dish, pour 1 can of crème of Mushroom soup over everything. Since everything is already cooked, just heat well in oven until soup is bubbly and contents are hot.
Makes 4 to 6 serving.
This dish can be frozen before adding soup.
For later use, let thaw, add soup or gravy and heat.
