1 lb. turkey burger
1 large onion chopped
1 or 2 garlic cloves, crushed
2 16 oz. cans of diced tomatoes, no salt added
2 cups water
8 oz uncooked spaghetti (I'm partial to angel hair)
5 or 6 slices of American cheese
Olive oil
Parmesan cheese (optional)

Use a really big skillet

1. Saute the onions & garlic in olive oil until the onions are soft. The put them in a bowl

2. Add some more olive oil to the skillet and brown the turkey burger.

3. Add the tomatoes, water, spaghetti, and add back the onions & garlic. I like to break the spaghetti into smaller pieces. It fits in the pan a little easier.

4. Simmer to reduce the liquid and to cook the pasta, stirring frequently.

5. When the spaghetti is tender, put the cheese on top of the mixture. When the cheese is melted, stir it into the mixture. Keep simmering until it's as thick and rich.

Serve with Parmesan cheese, if desired.

I started with a recipe on the internet, but on inspecting the pantry, I didn't have most of the ingredients they specified. So, I took what I had on hand and substituted like a mad woman. It turned out to be quite tasty. Enjoy!
