2c. solid pack pumpkin
3 egg yolks
1/2 c. sugar
1/2 c. milk
1/2 tsp. sale
1 Tbsp. cinnamon
1 envelope of plain gelatin
1/4 c. water
1 container of Cool Whip ( can use beaten egg whites, but many are not comfortable with eating raw eggs)

Directions:
Directions:
Cook: pumpkin, egg yolks, sugar, milk, salt an cinnamon in a saucepan until thick. Add dissolved gelatin. Fold in cool whip.

Great in a cooked pie shell, or in bowls like pudding.
Keep refrigerated.
