Nonstick cooking spray
1(2 lbs.) package frozen hash browns, thawed
salt and pepper , to taste
1/4 lb. (1 stick) margarine or butter
1/2 c. minced onion
1 (8oz.) container sour cream
1 (10.75 oz.) can condensed cream of chicken soup
2 cups shredded Colby cheese, ( I prefer sharp cheese)

Preheat oven to 350º. Grease a 9x13 inch baking pan. Spread the potatoes in the pan. Season with salt and pepper. Melt the butter in a medium bowl in the microwave. Add the sour cream, and the soup and mix together. Pour the soup mixture over the potatoes. Sprinkle with the cheese. Bake for 45 minutes, or until all is completely warm and the cheese begins to melt.
