2 lbs. Gouda Cheese
3/4 C. butter, cubed and softened
2 tbsp. fresh chives, snipped
2 tsp. Dijon mustard
1/2 C. amber ale, at room temperature
Cocktail rye or pumpernickel bread slices

Directions:
Directions:
Cut 1/3 from the top of the cheese flat surface of the wax wrapped piece of Gouda cheese. With butter or melon baller, remove cheese from center of cheese round leaving 1/2" thick shell. Shread cheese from ball and top to measure 4 C. In a large bowl place shredded cheese, butter, chives and mustard until blended. Stir in beer until blended. Spoon spread into hollowed cheese ball; reserve remaining spread for refills. Chill until serving time. Serve with cocktail bread. Makes 4 cups.
