2.5 lbs stew beef
1 lb carrots (each carrot cut into 3 pieces)
1 lg onion (cut in eighths)
2 stalks celery (cut into 1-inch pieces)
2 tsp salt
3 tbsp tapioca
1 heaping tbsp sugar
12 oz. V8 juice

Directions:
Directions:
Brown beef in a 41/2 qt. Dutch oven. Pour off about half of the liquid from beef. Adding remaining ingredients and place in 250º oven (bottom rack) with lid on tightly. Cook about 4:30 to 5 hours. Stir about twice during the cooking time if you would like, but not necessary.

You can store remaining tapioca box in a plastic bag in freezer. Will keep for years.
