1 lb. Elbow Macaroni
1 tbsp. Oil
8 tbsp. + 1 tbsp. Butter
1/2 cup shredded Muenster Cheese
1/2 cup shredded Mild Cheddar Cheese
1/2 cup shredded Monterey Jack Cheese
2 cups Half & Half
1 cup Velveeta, cut into small cubes
2 large Eggs, beaten
1/4 tsp. Seasoned Salt
1/8 tsp. Black Pepper

Directions:
Preheat oven to 350º. Butter deep 2 1/2 qt. casserole dish. Cook macaroni with oil in the water until tender (about 7 minutes). Drain. Return to cooking pot. In a small pan, melt 8 tbsp. of the butter. Stir into macaroni. In a large bowl, mix the cheeses. To the macaroni, add the half & half, 1 1/2 cups of the shredded cheese, the cubed Velveeta and eggs. Season with salt and pepper. Put in the buttered casserole dish. Sprinkle with the remaining cheese and dot with the remaining tablespoon of butter. Bake 35 minutes.
