Ingredients: DOUGH INGREDIENTS: 1 1/4 TEASPOONS INSTANT OR BREAD MACHINE YEAST 3 TABLESPOONS NONFAT DRY MILK 3 CUPS UNBLEACHED ALL PURPOSE FLOUR 1/2 TEASPOON SALT 1 TABLESPOON BUTTER CUT INTO PIECES AND SOFTENED 9 OUNCES OF WARM WATER
WATER BATH 2 QUARTS WATER 1/4 CUP BAKING SODA 1 TABLESPOON SALT

Directions:ADD ALL DOUGH INGREDIENTS INTO BREAD MACHINE IN ORDER GIVEN. SELECT DOUGH CYCLE. CHECK DOUGH AFTER A FEW MOMENTS IT SHOULD BE STICKY. WHEN COMPLETED TURN OUT ONTO FLOURED SURFACE. PREHEAT OVEN TO 400 DEGREES. DIVIDE DOUGH INTO 8 PIECES. AND ALLOW TO REST FOR 15 MINUTES. IN THAT TIME PREPARE WATER BATH. AD SODA AND SALT TO WATER AND BRING TO A BOIL. GENTLY SMASH EACH DOUGH BALL INTO A FLAT BUN LIKE SHAPE. DROP EACH BUN INTO BOILING WATER BATH COOK 30 SECONDS THEN FLIP AND COOK ANOTHER 30 SECONDS. THEY WILL BE WRINKLY AS A RAISIN. REMOVE EACH BUN TO A COOKIE SHEET COVERED SHEET OF PARCHMENT PAPER. THESE BUNS ARE PRONE TO MAJOR STICKING, MAY HAVE TO GREASE PARCHMENT PAPER. USE A KNIFE AND SLICE AN X INTO EACH BUN ABOUT 1/2 INCH DEEP. SPRINKLE WITH COURSE SALT. BAKE 20-24 MINUTES. REMOVE BUNS FROM PAN TO COOLING RACK IMMEDIATELY. |
