2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground nutmeg
4 eggs
1 (15-oz.) can 100% pure pumpkin (not pie filling)
1 1/2 c. sugar
1 c. vegetable oil
1 tsp. vanilla extract

Preheat oven to 350 º F. Coat a 9- x 13-inch baking dish with cooking spray. In a large bowl, combine flour, salt, baking powder, baking soda, cinnamon and nutmeg; mix well and set aside. In another large bowl, beat together remaining ingredients. Gradually add flour mixture to pumpkin mixture; beat well then pour batter into baking dish. Bake 30 to 35 minutes, or until a toothpick inserted in center comes out clean. Let cool completely then cut into squares.
