2-4 Chicken Breasts
Mayonnaise
1 Yellow Onion
4 Garlic Cloves
1 Green Pepper
Sazon CompletaAdobo
Sazon Goya con culantro y achiote
Garlic Powder
Salt
Pepper
White Rice
Butter
1lb Shredded Mozzarella

Directions:
Directions:
Boil Chicken with, whole onion halved, sazon complete, garlic cloves, green pepper halved, salt, pepper, adobo, garlic powder.

Prepare Rice: Add 1/2 butter stick, sliced to rice cooker, add 3-4 cups of rice, 4-6 cups of water, salt to taste, 2 pkts sazon Goya, sazon complete, garlic powder.

Once chicken is cooked remove and shred. Then add to rice and stir. Make sure there's enough water to cover 1/2 inch over rice and chicken. Water should be orange in color, if not add a bit more sazon Goya. Turn on rice cooker.

Preheat oven to 400.

Once rice and chicken are cooked transfer it all from rice cooker to large mixing bowl. Add mayo to taste and 1/2 the bag of mozzarella cheese and mix it all together.

Transfer rice and chicken mix from bowl to deep baking dish. Spread evenly flat on dish, slightly mushing down to pack. Sprinkle the top with the rest of the mozzarella, covering entire top. Bake until top cheese is melted and golden brown.
