Ingredients:  
5 lbs. red potatoes (boiled with skins on and peeled and sliced)
1/2 pound country bacon (cut into small pieces)
1 medium onion (chopped)

Directions:
Directions:
1. Mix 1/4 of the onion with the potatoes in a heavy bowl and put aside.
2. Brown remaining onion with bacon in a skillet until bacon is cooked thoroughly. (We cook it until it's crispy, but that's a personal choice) Do not pour off grease.
3. Turn off heat.
4. Add 1 cup of sugar and 2 cups of white vinegar to the bacon and onions.
5. Turn heat back on and heat to a rolling boil. Pour over potatoes while hot.
6. Mix well. Add salt and pepper to taste.

* Make it the day before and stir several times during the day.
