5 halved chicken breasts
2 eggs
flour
Italian seasoned bread crumbs

1/4 cup flour
3 Tbsp. melted butter
3 cups milk
1/2 tsp. salt
1/8 tsp. pepper
1/2 cup dry white wine
1 1/2 cups Monterey Jack cheese
6 tomato slices

Directions:
Directions:
Pound chicken breasts. Coat with flour, egg wash and then bread crumbs. Fry in a skillet with olive oil or butter. Bake in 350º oven for 20 minutes.

Melt butter and add flour. Slowly whisk in milk until sauce thickens. Cool slightly (at least 15 minutes) and then add wine, salt and pepper. Mix well.

Coat bottom of dish with sauce. Arrange chicken and pour remaining sauce. Cover with aluminum foil and refrigerate overnight. Remove from refrigerator 30 minutes prior to baking. Bake 45 minutes at 350º. Remove foil and top with cheese and tomatoes. Heat for another 5 minutes until melted.
