1 pound ground turkey (ground beef or ground chicken can be subbed)
1 egg (lightly beaten)
3/4 cup whole-wheat panko bread crumbs
1/2 cup onion (grated)
2 cloves garlic (peeled and minced)
1 cup broccoli, with stems (finely chopped)
1/2 cup cheddar cheese (grated)
1/4 cup parsley (chopped)
kosher salt and black pepper (to taste)

Preheat oven to 400ºF. Line a baking sheet with foil and spray with non stick cooking spray.

In a large bowl, add turkey, egg, bread crumbs, onion, garlic, broccoli, cheddar and parsley, and mix to combine. Season with Kosher salt and black pepper to taste. Shape mixture into golf-ball sized balls. Place finished turkey balls on baking sheet and bake until cooked, about 15-20 minutes.

** Helpful tip: freeze cooked meatballs for easy weeknight meals.
