Mom's Carrot Loaf Recipe

3 c shredded carrots, approximately 5 carrots
2 c white sugar
1 1/2 c vegetable oil
5 eggs
2 c flour
2 tsp baking soda
1 tbsp cinnamon
pinch of salt
1/2 c pecans or walnuts, chopped

Old Fashion Icing 1:
1/8 c shortening
1 1/2 c icing sugar
3 tbsp milk or until right consistency
1 tsp vanilla

or

Old Fashion Icing 2:
3/4 c milk
3 tbsp flour
1 tsp vanilla
3/4 c shortening
3/4 c white sugar

or

Cream Cheese icing:
1/2 c butter
8 oz cream cheese
2 tsp vanilla
2 c icing sugar

Loaf:
Shred carrots, put aside. In large bowl, mix oil and sugar until light and fluffy, add eggs one at a time. Add flour, baking soda, cinnamon and salt. Mix until well incorporated. Fold in nuts and shredded carrots.

Pour batter into 2 (8 x 5) well oiled and floured loaf pans or a bundt pan. Bake in a preheated 350º oven for 1 hour or until done. Cool before icing.

Old Fashion Icing 1:
Combine all ingredients in bowl, whip until smooth, pour over loaves/cake. This icing freezes very well.

Old Fashion Icing 2:
In sauce pan, combine milk and flour, cook over medium heat until sauce starts to thicken, remove from heat. In bowl, add cooked milk and flour mixture, vanilla, shortening and sugar. Beat until smooth and fluffy. This icing also freezes well and never hardens.

Cream Cheese Icing:
Put all ingredients into mixing bowl. Beat slowly at first to combine than beat at medium speed until light and fluffy.
