1 lb Calves Liver, sliced thin
1 large or 2 medium Yellow Onions
4 slices Bacon
All-Purpose Flour
Salt and Black Pepper to taste
˝ cup Water

Directions:
Directions:
Fry bacon in a large skillet. Set aside to drain on a paper towel. Pour off grease except for two tablespoons (reserve some grease as it may be needed later). Season liver with salt and pepper and dredge in flour. Fry the liver until brown on both sides (don't overcook). Move liver to a paper towel. If necessary, add some additional grease to pan. Sauté onions until translucent. Place the liver on top of onions and add water. Cover with a lid and steam for two minutes. When serving, place liver on a slice of bacon and cover with onions (or reverse it if you like). Goes great with garlic mashed potatoes.

Most people I know turn up their noses when I say I love liver and onions. I think most of them have never tried it. Dad said he liked it better than steak. I agree. Just don't overcook it.
