1 lb Ground Beef
1 small Onion, diced
6 Green Peppers
½ tsp Garlic Powder
½ tsp Salt
½ tsp Pepper
1 tsp Sugar
2 Tomatoes, diced
1 (14½ oz) can Tomato Sauce
1 cup Water
1 cup Minute Rice

Directions:
Directions:
Wash peppers, cut off tops and remove seeds and pith. Boil 4 cups of water in a large saucepan. Drop in peppers and boil for 5 minutes. In a skillet, brown ground beef. Drain the fat and add the spices, sugar, tomatoes and onion. Add 1 cup water and bring to a boil. Add rice and cook for 5 minutes or until water is gone. Stuff peppers with beef mixture and place in a 9x12 casserole pan. Pour tomato sauce over peppers and cover with foil. Bake for 45 minutes at 350°F; uncover and bake for 15 minutes more. I know it's two starches, but Mom always served mashed potatoes with some of the drippings spooned on top.

I've copied this from one of Mom's handwritten recipes. I had this for many, many dinners during my youth. Loved it. What could be better? You get your veggies, meat and starch, all in one package. Choose large peppers that are symmetrical in shape. Mom always used green peppers (probably because that's all we grew in the garden), but you could use red or yellow, or both, for a nicer presentation. Slice a little off the bottom of peppers so they sit upright in pan.
