3 eggs
1 cup sugar
1 tbsp. lemon juice
1 cup cake flour ,sifted
1 tsp. baking powder
1/4 tsp. salt
1 tbsp. butter, melted
1/2 cup milk, hot
Assorted berried
1 tub cool whip

Directions:
Directions:
1. Beat together 3 eggs until thick and lemon-colored.
2. Add in sugar gradually, beating well after each addition
3. Stir in lemon juice.
4. In a separate bowl, sift together flour, baking powder, and salt
5. Fold dry ingredients into egg mixture
6. Blend melted butter and hot milk into egg mixture quickly
7. Pour batter into a 9x9x2 inch pan lined with wax paper
8. Bake at 350º for 30 minutes
9. Once cooled, Top with sweetened berried and cool whip

Layers of this cake can also be split and filled with the berries and cream. This cake can also be used in the English trifle as a substitute for sponge cake!
