5 cloves garlic, grated
2 lemons, zested and juiced
5 tbsp. olive oil
1/2 tsp. red pepper flakes
1 pound shrimp, peeled and deveined (save the shells)
1/4 onion
3/4 pound pasta
1 stick butter
1 small bunch parsley, chopped
Pinch of salt
Pinch of pepper

Prepare Shrimp: Combine garlic cloves, lemon zest from 1 lemon, juice from 1 lemon, olive oil, red pepper flakes, salt, pepper, and cleaned shrimp in a bowl. Mix together and set aside to marinate while stock is prepared.

Prepare Shrimp Stock: Place a small pot over medium heat. Add shrimp shells and onion and cover with water. bring to a boil. Reduce heat and simmer for 20 minutes. Strain liquid into a bowl and discard shells and onion.

Cook pasta according to direction on box

Cook Shrimp: Zest remaining lemon into a large skillet and add butter. Add shrimp to lemon and melted butter and ladle in stock for flavor. Once shrimp are pink (do not over cook as shrimp will get rubbery and tough). Toss in cooked pasta and let flavors coat noodles.

Serve and enjoy
