2 fryer chickens (about 16 pieces)
3 1/2 teaspoons of salt divided
Juice of one lemon
1 cup of all purpose flour
1 teaspoons of paprika
1/8 teaspoon of ground black pepper
Canola oil
2 Tablespoons of water

Directions:
Directions:
Place the chicken pieces in a large bowl. Add 3 teaspoons of salt, lemon juice and enough water to cover chicken pieces. Soak over night in refrigerator. Then drain the chicken pieces thoroughly. In a paper bag add the flour, paprika, pepper and the remaining salt. Toss your chicken pieces in the flour mixture. Shake off the excess. Heat about 1/2 inch of oil in a large skillet. When hot, carefully add chicken pieces and brown lightly on all sides about twenty minutes. Reduce the heat. Now add the two tablespoons of water, cover and cook until tender. This should take about twenty minutes. Uncover and cook until chicken is crisp. . About 10 minutes
