1 Large Eggplant
3 TB Lemon Juice
1 Clove of Garlic
1/2 Cup of Olive Oil
1/2 TSP of Sugar
To taste - Paprika, Salt, and Pepper

Bake Eggplant @ 350º for 1 hour, 15 minutes or until soft but not mushy.

When cool to touch, remove skin.

Put everything in blender and combine.

Serve with warm pita or challah.
