1.1/4 cup course salt (kosher or sea)
2. 1/4 cup dark brown sugar packed
3. 1/4 cup paprika
4. 3 Tablespoons freshly ground black pepper
5. 1 Tablespoon garlic powder
6. 1/2 to 1 Tablespoon dried onion flakes
7. 1/2 to 1 teaspoon cayenne pepper
8. 1/2 teaspoon celery seeds

1.Combine all the ingredients in a bowl and stir or whisk to mix.
2. Transfer to a covered jar and store away from heat and light. The rub will keep for several months.
