3 c flour
2 c sugar
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
11/2 c vegetable oil
3 eggs
11/2 tsp vanilla
1 can crushed pineapple (8 oz)
3 large bananas, chopped
2 c chopped pecans
Directions:
Directions:
Combine the first five ingredients in a large bowl.
Add and stir until combined vegetable oil, eggs, vanilla, pineapple, bananas and pecans.
Pour into greased and floured 10" tube pan. Bake at 325º for 75 minutes. Cool in pan.

Frosting:
1 stick butter, softened
8 oz cream cheese, softened
1 tsp vanilla
1 box confectioner's sugar

Combine until smooth and creamy. Spread over cooled cake.

You can substitute 3/4 cup apple sauce and 3/4 cup oil for the 11/2 cups vegetable oi if you want to cut some calories out of this recipe. I have not been brave enough to take all the oil out and replace with apple sauce.
You can also freeze the cake, before frosting, if you want to make ahead or have on hand.
