Irish Soda Bread Recipe

4 Cups Flour
4 Tbls. Sugar
1 Tsp. Baking Soda
1 1/2 Tsp. Kosher Salt
4 Tbls. Unsalted Butter, cut into cubes
1 3/4 Cup Buttermilk
1 Extra Large Egg, lightly beaten
1 Tsp. Orange Zest
1 Cup Dried Currants/ 1 Tbls Flour

Directions:

In a mixer fitted with paddle attachment put dry ingredients and give a quick stir.
Add the butter and mix on low till incorporated.
In a bowl mix egg, buttermilk, zest.
With mixer running on slow add the wet ingredients.
Mix the currants with a tbls of flour and mix into the bread just mixing briefly.
The bread will be very wet and sticky.
Turn onto a well floured board, knead a couple times and shape into a round loaf.
Place on a sheet pan lined with parchment and bake 45-55 minutes in a 375 degree oven.

When done the bread will sound hollow.
Note: This is a very rustic looking bread.
I always zest the whole orange, no waste and I love the orange flavor.

Cool on a baking rack, serve warm or at room temperature.

This bread is so good it almost feels like you're eating a dessert.
Great with butter or butter and honey.
Delicious!
