6 pork chops
2 tbsp. lard or drippings
1 c. uncooked rice
1 envelope onion soup mix
1 can (4 oz) sliced mushrooms
2 tbsp. diced pimento
hot water

Directions:
Directions:
Brown pork chops in lard or drippings. Spread rice in 9 x 13 baking dish. Reserve 1 tbsp. of onion soup mix for top, sprinkle remainder over rice. Drain mushrooms, reserve liquid and put mushrooms and pimentos over rice. Add hot water to mushroom liquid to total 3 cups liquid and pour over rice.

Arrange browned chops over rice mix and sprinkle reserved soup mix over chops.

Cover tightly with foil and bake at 350º for 45-60 minutes. Remove foil and bake 10 minutes longer or more until any excess liquid evaporates.
