3 1/2 c. water
1 1/2 to 2 c. hazelnuts (filberts)
4 T. baking soda

Directions:
Directions:
Oven 350º. Sheet pan ready
Lg saucepan, bring water to full boil. Add baking soda to water (will bubble). Quickly add hazelnuts.
Cook 3-4 min. Test a nut to see if skin comes off easily. Remove from heat and strain in colander and rinse under cold water and slip skins off. Dry nuts and transfer to baking sheet.
Put in oven and toast stir often, 15-20 min until light golden brown and fragrent. Cool on wire rack before chop and use in recipes.
