1 lb. lean ground pork
1/4 cup finely grated potato
1/4 cup fish sauce
2 tsp. fresh coriander or cilantro
1 tsp. mashed garlic (or less to taste)
3/4 cup cooking oil (to fry meatballs)
2 tbsp. cooking oil (for peanut sauce)
1 tsp. grated ginger root
1 red chili, seeded and finely chopped
3 tbsp. chunky peanut butter
1 tbsp. brown sugar
1/2 cup coconut cream or coconut milk
1 tsp. chopped basil

Directions:

Meatballs: In a bowl combine pork, half of the fish sauce, half of the ginger root, and coriander or cilantro, and grated potato (if using). Knead together. With wet hands form mixture into walnut sized meat balls. In a large skillet shallow fry the meatballs in hot oil for 5 minutes or until golden brown on the outside and no longer pink in the middle. Drain on paper towels and keep warm.
Peanut Sauce: Drain the oil from the skillet and discard. Wipe skillet with a paper towel and add 2 tablespoons of cooking oil. Cook the remaining ginger root and the chili for 1 minute. Add the peanut butter, brown sugar, remaining fish sauce, and coconut milk. Stir till combined. Cook over medium heat till the sauce is smooth and thick. Stir while it is cooking so it does not stick. Add basil and stir. Serve the peanut sauce warm or at room temperature in a small bowl.
Arrange meatballs on a shallow dish and provide toothpicks to use for dipping the meat balls into the peanut sauce. Meatballs can be reheated in the microwave or served at room temperature.

If you put the grated potato in the meatballs the inside texture will be softer. I usually make smaller one bite meatballs if I am serving them as an appetizer. You can just bake the meatballs in the oven but they will not have the same texture on the outside. Can use dried pepper flakes or hot pepper sauce instead of the fresh chili pepper. Amount of heat can be adjusted to taste. As the fish sauce is salty there is no need for additional salt. Can use smooth peanut butter and add a few finely chopped peanuts if you have them. The peanut sauce is very rich. Commercial peanut sauce is an acceptable substitute for home made
