2 T. canola oil
1/2 c. fresh tomato, chopped
5-6 green onions, chopped
3/4 t. cumin
1 clove garlic, minced
1/2 t. pepper
1 t. parsley
1/2 t. coriander
15 oz red kidney beans (not drained)
1/2 T. sugar
1/4 c. chicken broth
1 1/2 T. cilantro, roughly chopped
1 1/2 c. brown rice, cooked

Directions:

Heat canola oil in medium sized skillet.

Add the chopped tomatoes, chopped green onion, and spices to the pan. Saute them until they are soft, about 5-8 minutes.

Add the beans (including liquid) to the pan, sugar, water, and the chicken broth. Bring to a boil and simmer for 10 minutes more until most of the water has evaporated and the beans have thickened.

While beans are simmering, prepare the rice.

Remove from heat and stir in the chopped cilantro.

Serve over rice or mix together and serve.

Try regular onions instead of green onions for more flavor.

You will want to add salt at some point. Fresh squeezed lime juice might also add more flavor.
