6-8 baby leeks, trimmed and chopped
4 scallions, chopped
4 c. baby spinach
8 large eggs
1/4 c. milk
Freshly grated nutmeg
4 oz soft goat cheese, chopped
1 T. canola oil
Salt, to taste
Pepper, to taste

Preheat broiler to high.

Blanch the leeks in a saucepan of boiling water for 2 minutes.

To the saucepan, add the scallions and spinach just before the end of cooking time.

Drain, rinse in cold water, and dry on paper towels.

In a large bowl, which together the eggs, milk, and nutmeg. Season with salt and pepper.

Add goat cheese, leeks, spinach, and scallions, mixing gently.

Heat the oil in a nonstick skillet. Pour in the egg mixture and saute gently for 4-5 minutes.

Finish under the hot broiler for 4-5 minutes until the top is golden brown and just firm.
