2 sticks butter, softened
1 c powdered sugar
1 egg
2 1/2 c flour
1/2 c unsweetened cocoa powder
3/4 tsp salt
almond bark for dipping, white or chocolate

Directions:
Directions:
Cream butter and powdered sugar. Add the egg and vanilla and mix to combine. Add the flour, cocoa powder and salt and mix until dough comes together. Press dough into a thick disk.Wrap in plastic wrap and refrigerate for 2 hours.

Preheat oven to 375 degrees F. Line baking sheets with parchment or baking mats.

Roll out dough to about 1/4-inch thickness.Cut using a cookie cutter. Place cookies on prepared baking sheets. Bake 7-9 minutes being careful not to burn. Cookies do not spread while baking.

Remove cookies from the oven and place cookies on a wire rack. Cool completely.

Melt almond bark and dip half of the cookie to coat. Place on parchment paper or wax paper to dry.
