5 tomatillos (choose small ones)
8 jalapeņo peppers
3 tomatoes
2 garlic cloves
1 T salt
6 oz. water*

Directions:
Boil tomatillos, and puree. Boil tomatoes and peppers on high for 10 minutes. Drain. Put boiled, tomatoes, garlic and jalapeņo peppers in blender with , water and salt. Blend to desired consistency. Add prepared tomatillos.

*check consistency before adding water.

The El Camino people (see note below) said that boiling the jalapeņos takes out a lot of the heat.

I thought I would share this with the club because we went to El Camino a few years ago and thanks to Carla Valley who organized it, we had a private room upstairs where they showed us how to make salsa and guacamole. I took these notes and never got around to sharing (oops!). I had an abundant crop of tomatoes from our plant and tried it. Came out great so I thought I would share. I didn't uses tomatillos because I needed to use up tomatoes. Still tastes great. It is a little spicy but you can cut back on the jalapeņos. Enjoy!
